Kovakkai Poriyal is a popular South Indian stir fry which is prepared almost in all house. Kovakkai (in Tamil) is nothing but ivy gourd (in English), tindora (in Hindi), Dondakaya (in Telugu). This small vegetable has so many health benefits in it. It is good practice to include this at least once in a week in our meal.
Kovakkai Poriyal is very simple to prepare with fewer ingredients and tastes awesome. This can be had as a side dish with rice, Onion Sambar, Paruppu Rasam, curd or can be had along with any Indian bread like Roti, Chapati. Here I have shown the easy method using the microwave. I almost use all gadgets in my kitchen to utilize time. Also as we cook in the microwave it takes only less oil compared with directly cooking on the kadai. You can cook as per your preference.
