Nei Appam is a South Indian sweet which is prepared mainly on Krishna Jayanthi or Karthigai Deepam. This sweet is prepared using rice and jaggery as the main ingredients. Nei appam is usually deep fried in ghee hence the name Nei Appam.
The traditional method of making Nei Appam is a lengthy and time-consuming process. You need to make flour from rice, make jaggery syrup, add to the batter and ferment it for 6-7 hours and then deep fry it in oil or ghee. Nowadays as all are looking for the easy and quick process, I have specified here a very easy and simple method. Soak rice in water, drain it, add all the ingredients specified to the mixer and grind to a fine paste to dosa batter consistency. Instead of deep frying the batter, pour the batter in the paniyaram pan, as it also consumes less oil/ghee. Once cooked on both side remove it from the pan and enjoy it hot or cold.
