Senai Kizhangu Varuval is a typical South Indian Fry which goes well with Mor Kuzhambu, Rasam, Sambar, Puli Kuzhambu, Curd rice and even with Vegetable Biryani. Last week I made Vegetable Biryani. As you know it contains loads of basic veggies in it, I paired it with this Yam Fry. Senai Kizhangu means Elephant Foot Yam in English and Suran in Hindi.
Senai Kizhangu Varuval is a yummy fry. The only problem with yam is its itchy nature. Yes sometimes if not properly cooked it will itch in the mouth. Even while cutting the yam you can feel the itch in your hands. In order to avoid the itching following precautions can be taken.
Senai Kizhangu Varuval itch precaution:
- Apply oil to your hands, in order to prevent your hands from itching while cutting yam.
- Boil yam in tamarind or curd or lemon juice water, discard the water to minimise the irritation.
- Deep frying the yam in oil can also reduce the irritation.
